Tomato, Chilli and Coriander Pasta Salad

Recently I have being trying to eat a bit healthier, cutting down on baked goods and beginning to exercise more. I often used to eat bread or wraps for lunch, which although I really enjoy, they are not the healthiest foods to be putting into your body!


Since it is summer I have enjoyed eating colourful foods such as salads! I often prepare a medley of different salads to eat at lunch. These include my Crunchy Carrot salad, Potato salad, egg mayonnaise, as well as lettuce and different veggies like cucumber, peppers, avocados and the likes. 


However I also enjoy to prepare and eat cold pasta salads which are extremely tasty, delicious and pretty simple to prepare! 

Today's recipe is a new favourite of mine, quick to prepare, but strong in flavour. The sauce I am using today is from an Irish company called The Scullery. I got my hands on this delectable sauce from a hamper from the site Viking Direct who not only supply office stationary, but a range of food and drink products as well. I hope you enjoy this dish!


Ingredients:

75g Pasta (Any shape you desire)
1 Onion (finely chopped)
1 Clove Garlic (Crushed)
Freshly chopped coriander
4 tbls Tomato, Chilli and Coriander sauce from The Scullery

Method:

1. Cook the pasta in boiling water until al dente. Strain through a colander and rinse with cold water until cold.

2. On a low heat, saute the onion and garlic in a bit of oil for about 5-8 minutes or until soft and slightly golden.

3. Add the cold pasta, coriander, onion mixture and sauce together and mix thoroughly.

And that's it! A simple little dish, which will add colour and flavour to any array of salads.
