Chocolate Birthday Cake..

Recently, I was asked to make a birthday cake. When I think of a birthday cake I always think of CHOCOLATE! So low and behold I created this wonderful, sweet and chocolate cake, perfect for the get-together!

This cake is super quick to make and turns out great. When divided into the two tins, the cake comes out the perfect depth. Not too big, but not too thin either!

You simply must give this a try! A great treat for all the family... Enjoy :)

Ingredients:

Cake:
250g Butter- softened
250g Caster Sugar
3 Eggs- Beaten
115g Dr.Oetker Milk Chocolate- Melted
1 Tsp Vanilla Extract
225g Plain Flour
4 Tbls Cocoa Powder
1/2 tsp Baking Powder
Pinch of Salt

Icing:
95g Butter softened
30g Cocoa powder
260g Icing Sugar

Decorations (eg, sprinkles, smarties, marshmallows, biscuits, fondants)

Method:

Cake:

1. Preheat oven to 180C. Grease and line two 23cm round baking tins.

2. For the cake, beat the butter and sugar together in a bowl with an electric mixer. Add the vanilla and gradually add in the eggs, beating after every addition.

3. Add the cooled, melted chocolate and stir to combine.

4. Sift in the flour, cocoa, baking powder and salt. Fold the dry ingredients in, using a spatula until combined.

5. Scoop out the mixture into the prepared tins, ensuring the surfaces are even.

6. Place the tins in the oven and bake for 35-45 minutes, until evenly cooked and an inserted skewers comes out clean.

7. Remove from the oven and allow to cool on a wire rack.

Icing:

8. In a medium bowl, mix the butter, icing sugar and cocoa together, using an electric mixer until combined.

9. When the cakes have cooled completely, place one half on a large place, or cake stand.

10. Using a palette knife, spoon half of the icing on the cake and spread out evenly.

11. Place the other cake on top. Then using the remaining icing. spread it out evenly onto the cake.

12. Decorate as you wish. Above, I have used smarties, oreos, Dr. Oetker chocolate stars and Dr. Oetker vanilla icing.

And that's it! It really is only a couple of steps, but will leave people gobsmacked with its incredible taste and show stopping appearance!

Where I Have Been and Dr Oetker Goodie Pack...

Well hello there! Yes I do still exist!!

Its been a while.. Too long...

But I am hopefully back in action again! I have been crazy busy these last few weeks and I want to apologise for my absence here on the blog!

In the last few weeks I have received my Leaving Certificate results, accepted a place in college, passed my driving test, moved away from home and started college. Crazy busy if I do say so myself!

I haven't been able to post regularly and I have missed it so much. However, I do hope to be posting regularly again.

So after spending a busy week up the country in college, I came home to a lovely surprise. Waiting for me was a big shoe box size full of goodies! I was like a little child at Christmas taking everything out of the box. One by one I smiled as I imagined what and when I would use each item!

Some things I often use, whereas others, I had yet to try. Now I have the opportunity to and I am beaming!

I received the box from the very generous Dr Oetker team who I want to thank.

I would now like to inform you all about a very exciting competition they have running! The 'Big Cake Bake' competition is running until October 7th, so get you entries in! They want you to create a cake using at least one Dr Oetker product. Take a picture and simply upload it onto their competition tab on their facebook page. You could win a Kitchen aid worth €500!
